Mediterranean Lemony lentils stew (5-6 servings)
Ingredients
• 2 cups of Orange Lentils
• 7 cups Water
• 5 Tbsp of White Rice
• 3 Spring Onions sliced
• Juice of 3 Lemons
• 1 Tbsp Sumac
• Salt & Pepper to taste
• 2 Tbsp Olive Oil
Method
• Rinse the Lentils under running water and set aside.
• On a medium saucepan add Olive Oil and then sauté the spring onion bulbs for 2 minutes.
• Add the Lentils and Rice and sauté for another 2 minutes.
• Pour the water and let it boil on high heat, when boiled set the heat to low and cover.
• After 15 minutes add the Lemon Juice, salt and pepper.
• Cook until the lentils are turning to a paste.
• Pour the water and let it boil on high heat, when boiled set the heat to low and cover.
• Transfer to a bowl, add the slices of the Spring Onions on top and sprinkle some sumac and Olive oil.
• Serve with a side of green salad and toasted pita bread.
