Baked Sweet Potato Fries
Eggplant Roll-ups (3-4 servings)
2 medium Sweet Potatoes
1 container of FreshMed Gourmet Green Peas & Tahini
100 g of Pickled Hot Banana Pepper Rings
1/2 tsp. of Smoked Paprika
1 tsp. of Sweet Paprika
1 tsp. of Garlic Salt
1/4 cup Extra virgin Olive Oil
Preheat an oven to 400°F
Slice Sweet Potatoes into 1/4″ slices (1cm)
In a bowl mix the Sweet Potatoes slices, Smoked and Sweet Paprika, Garlic salt and Olive oil until well coated.
Arrange the slices on a large baking tray, evenly space them out.
Bake for 40 minutes until brown and crispy, 20 mins on each side (flipping halfway through cooking )
Spread the Green Pea & Tahini on top of the sweet potato fries.
Garnish with the pickled hot Peppers
