Garlic and Parsley Mushrooms (serving 4)
Ingredients
• 850 g of Mushrooms (Oyster, Enoki, Shiitake and Cremini)
• 4 cloves of minced Garlic
• 4 tbsp Olive oil
• 4 tbsp of White Wine Vinegar
• 1 tsp Dry Thyme
• 3 tbsp nutritional yeast
• Salt and Pepper to taste
• Bunch of chopped Parsley
Method
• Heat Olive oil to a pan, add Garlic and sauté until golden brown
• Add the Mushrooms and stir until semi-soft
• Add the Thyme, nutritional yeast, Salt and Pepper and sauté for 5 minutes
• Add the White Wine Vinegar and half of the Parsley
• Taste for seasoning
• Turn off the heat and garnish with the rest of the Parsley.
