Broccoli Soup (3 servings)
Ingredients:
• 2 small Broccoli crowns
• 1 yellow onion diced
• 1 Celery stalk diced • 1 Carrot diced
• 2 cloves of Garlic minced
• 1L vegetable stock
• 1/2L Water
• 1 tsp dry thyme
• 1/2 tsp Cayenne Pepper
• Salt and Pepper to taste

Method:
• In a big pot fry the onions until golden
• Add the Garlic, Celery and Carrot and cook for 2 mins • Add the Broccoli crowns, Thyme, Cayenne, Salt and Pepper and mix for 2 more mins
• Pour the vegetable stock and water cover and bring to a boil • Reduce the heat to low and simmer for 40 mins.
