Herbal Falafel (4 servings)
Ingredients
● 1 cup dried chickpeas
● 1/2 a yellow onion, diced
● 4 Cloves Garlic minced
● 1/2 cup chopped Italian parsley
● 1/2 cup chopped fresh Coriander
● 1/4 Cup of chopped Fresh Mint
● 1 1/2 tsp salt or as per taste
● 1 tsp freshly ground Black Pepper
● 1 tsp Cumin
● 1/2 tsp ground Coriander
● 1/8 tsp Cayenne Pepper
● 1/4 tsp Baking Soda
● 1 rounded tablespoon flour
● 2 tsp Lemon juice
Method
● Soak the dried chickpeas overnight in cold water.
● Drain the chickpeas and add them to a food processor with the Onions, Garlic, Parsley, Coriander, Mint, Salt, Pepper, Cumin, Coriander powder, Baking soda, Flour and Lemon Juice.
● Process the mixture until finely ground.
● Transfer the mixture to a bowl, cover and let sit for 2 hrs.
● Form into balls with an ice-cream scoop
● Fill 1/2 pot with oil for deep frying
● Deep fry the Falafel in 350F oil for 5 minutes until golden brown
● Best served alongside our Green Peas or Beets & Tahini Spreads
