Hummus (3 servings)

• 300 g of dry chickpeas
• 200 g Tahini (sesame paste)
• 1/2 cup cold water or ice cubes
• 6 cloves of Garlic
• 1 medium-size Onion quartered
• 5 Tbsp Lemon juice
• 2 Tbsp Olive oil
• Salt to taste
• 1 Tbsp Cumin

• Soak the dry Chickpeas overnight in cold water
• Drain the water and refill the pot with the chickpeas and fresh water,
bring to a boil
• Reduce the heat to low, cover and cook for 1.5hr
• Add the Onion and Garlic to the pot and cook for another hour until the
Chickpeas are soft and tender
• Drain the cooking liquid add the ice cubes and process in a food
processor into a paste
• Add the Olive Oil, Lemon juice, Tahini, Cumin and Salt and keep
processing into a fine and smooth paste.
• If the paste is too thick for your liking add more water or Lemon juice
if it’s too liquidy add more Tahini.
• Pour the Hummus paste into a plate, sprinkle with sweet paprika,
chopped Parsley or your favourite toppings, squeeze Lemon Juice and
drizzle some olive oil.
