Kale and Broccoli Pasta (4 servings)
Ingredients
• 1 medium size Broccoli cut into florets
• ½ a bunch of Kale
• Pappardelle Pasta
• 3 cloves of Garlic
• 1 tbsp of dry Thyme
• 1 tbsp of Garlic powder
• 2 tbsp Olive Oil
• 1 1/2 tbsp plant based Cream Cheese
• Juice of 1 Lime
• Salt and Pepper to taste
• 50 g of roasted Pistachios crushed
Method
• Cook the Pasta in boiling water as per directions on the package
• Boil water in a deep pot and bring to a boil, add Broccoli, Kale (without the stems), and garlic cloves
• When the Broccoli is softened drain most of the water and add the rest to a food processor, add the Olive Oil, and blend until a creamy sauce is formed
• Heat the sauce in a deep saucepan, add a little bit of the pasta water, and mix
• When the sauce is boiled add the Plant-based Cream Cheese and mix until it fully melts
• Add the Thyme, Garlic powder, and Lime Juice and season with salt and Pepper
• Add the Pasta to the sauce and mix until it’s well coated
• Garnish with roasted Pistachios and serve
