Roasted Pepper Dip (3 servings)
Ingredients
• 1 cup of roasted red peppers
• 1 cup raw Tahini
• 5 tbsp cold water
• 1 tbsp Vinegar
• Juice of 1 Lemon
• 1.5 tbsp Cumin powder
• 1.5 tbsp Garlic powder
• Salt and pepper to taste
• 3 Garlic cloves
Method
• Add Tahini, Peppers, spices, water, vinegar, Lemon juice and Garlic into a food processor blend until a paste is formed
• If the paste is too runny add a bit more Tahini. If you prefer a thicker consistency, add a bit more cold water.
• Serve with Roasted Red Pepper cubes and toasted Pita Bread.
